Does the entry country have to match my visa?

Yes. If you’re applying for an Italian Schengen visa, your first point of entry into the Schengen Area should be Italy. Your outbound flight should land in an Italian airport. Entering through a different Schengen country is possible but may flag as inconsistent with your application.

What if I’m flying via a connecting Schengen airport?

Connections within the Schengen Area (e.g., landing in Amsterdam then connecting to Paris) are fine — you will clear passport control at the first Schengen airport (Amsterdam in this case).
